I have a sweet tooth and one of the things I struggle with when trying to eat clean is figuring out healthy ways to satisfy my cravings for confectionery. This four ingredient coconut fudge often does the trick, plus it is a true delight.
Simply mix the ingredients in a large bowel until you have a doughy consistency. Place parchment paper in a baking pan; knead the mix into the pan. Freeze for 2-3 hours, then cut your fudge into squares and enjoy!
Ingriendents:
- 3 cups of shredded coconut
- 250g Almond-macadamia butter
- 3/4 organic maple syrup (adjust according to your preference)
- Chopped cherries or raspberries
I have kept these fudge squares for up to two weeks in the freezer and they retained a cool, fudge consistency. Do try them!
